Jackson Hospital Employees enjoyed an Ice Cream Social last week hosted by the Employee Leadership Committee. Several employees also entered in a homemade ice cream contest. The winner was Amanda Trino's Toffee Ice Cream. It was a great event for a hot summer day!
Amanda's Toffee Ice Cream Recipe
2 cups of heavy whipping cream
1 cup whole milk...
2/3 cup of sugar
1/8 t salt
6 large egg yolks
Your favorite flavoring! (I added a splash of vanilla and toffee bits)
Simmer cream, milk, sugar, and salt until sugar has completely dissolved. In a separate bowl whisk egg yolks. Slowly add approx 1/3 of the cream mixture to the eggs and whisk constantly. Combine all ingredients together and return to the stove cooking on low until the mixture gets to 170 degrees whisking frequently. Strain through a fine mesh sieve into a bowl. Cool to room temperature, cover and place in the refrigerator for at least 4 hours or overnight. Churn in your ice cream maker and ENJOY!
